Sweet Potato and Chicken Curry


1) 1 small sweet potato, peeled and diced

2) 100g boneless, skinless chicken breast, cut into small pieces

3) 1 tsp coconut oil

4) A pinch of turmeric

5) A pinch of ginger powder

6) Water


1) In a pan, heat the coconut oil over medium heat.

2) Add the chicken pieces and cook until lightly browned.

3) Add sweet potato, turmeric, and ginger, and stir to combine.

4) Add enough water to just cover the ingredients.

5) Simmer on low heat until the sweet potato is tender and the chicken is fully cooked.

6) Let it cool and serve in appropriate portion sizes.
